SATURATED & UNSATURATED oil/fats. So naturally peanut butter are supposed to be runny/watery and not solid, they should able to be poured over when you flip your bottle of peanut butter upside down and flowing like a thick sauce. But the bad thing is, they contain an unhealthy fat called “trans-fat”.
So as the peanut butter sits, the oil rises and collects at the top. That's often a sign it has added oils like cottonseed, rapeseed, soybean, or palm oil. They mix with the peanut oil preventing any oil at the top. If you prefer all-natural peanut butter, mixing that extra oil back in can be a mess.
If your classic peanut butter isn't separating, that's a a tell-tale sign that thick, unhealthy, and yucky hydrogenated oils have been added to the mix making it more like a peanut flavored Crisco than a true natural peanut butter. So maybe a little separation isn't so bad after all!
The beauty of using powdered peanut butter is that you can make it as thick or thin as you like by adjusting the water or adding more powder. I started with two heaping tablespoons of peanut butter powder and added about one tablespoon of water. Then I added more water until it was the consistency I was looking for.
