Old Amber/Helix Fossil/Cover Fossil - These can only be obtained by chance. Use Rock Smash on the rocks in the cave's lower level, and you may receive one. These can then be revived at the Fossil Lab. Jaw Fossil/Sail Fossil - When you reach the scientist in the cave's lower level, you'll get your choice of two fossils.
You aren't able to breed fossil Pokemon (even with Ditto), and you can only soft reset your game to shiny hunt fossils. All the fossil parts are available in every game, there are just certain parts that are rarer in other versions.

Lance's Aerodactyl knows Rock Slide in the Generation II games, although Aerodactyl could not know this move until Generation III.
In Pokemon Crystal, how do you get Aerodactyl? You trade a chansey for an aerodactyl on route 12. Good luck catching a chansey. They have 1% encounter rate on route 13, 14, and 15 with a capture rate of 30 so be sure to bring a bunch of ulta balls.

The first method requires you to fly back to Pallet Town, or simply travel back there on foot and then surf on the water at the south end of town. Surf all the way south and you'll have made it to Cinnabar Island. The next method requires you to surf south of Fuchsia City and head west.
Secondly, you need to travel to Cinnabar Island, then head to the Pokemon Lab in the South-West of the Island. You then need to go into the Testing Room on the far right. You can hand a fossil over to the Scientist in the north of the room. He will take and revive it.
