When Becky asks what she's eating, Cal says it's grass, but she soon realizes that she's eating her stillborn baby, and that Cal is actually Ross. As such, it's Cal who tricks Becky into eating her baby, as she was weak and dehydrated and needed to get her strength back.

The abandoned church was called The Church of Black Rock of the Redeemer. After Ross touches the rock, he says he has been “redeemed†and tries to convert the other people trapped in the grass.
Basically when people touch the rock they become blood hungry demons-like creatures who are captivated by the grass. Their souls are trapped in the field forever and they trick other people in. They are then forced to relive the same tragic fate over and over again at the hands of Ross and the other grass-faced people.
According to this explainer of the In the Tall Grass ending, "The Grass is able to alter the past whilst retaining elements of the future." This is how Travis ends up in the grass, eventually pulling in Tobin, who pulls in Becky, who pulls in Travis. Time is not linear in the Tall Grass.

Travis fears the responsibility of fatherhood. In the end, he touches the rock as a way to help Tobin – now an orphan – escape the time loop that will punish him forever otherwise, thus overcoming his fear and acting as a good father would, even if it means sacrificing himself.
By giving its key characters a sort of happy ending, or a semblance of one, the film closes its door on a direct sequel. The only way I see this work now is through new characters stepping into the endless tall grass field exploring new horrors since the opportunities there too are practically limitless.
