Offworld JawaIn episode 2, The Mandalorian comes up against a band of aliens during his quest to leave the planet, a band of aliens that will be very familiar to Star Wars fans: the Jawas. Because Jawas are native inhabitants of Tatooine, and the planet featured in The Mandalorian Episodes 1 and 2 is not Tatooine.
It is an ability created by photo-chemicals in their eyes. Jawas are believed to have evolved from a rodent like creature on Tattooine. Their glowing yellow to red eyes originally evolved to enable them to see in the dark. However, over time it also became a form of sexual attraction as well.
Jawas and Ewoks, although they both are short, are not the same species. Jawas originated on the planet Tatooine. The Ewoks, on the other hand, don't have much of a backstory, but they've adapted to life in the forest moon of Endor. They have a completely different language and structure.

Legendary Star Wars sound designer Ben Burtt created a script for the Jawa voice actors using the African language of Zulu, and then sped it up in postproduction. Though the language was only based on Zulu, some native speakers of the language, like The Daily Show host Trevor Noah, can translate.

The glowing eyes they seem to have is the result of polished orange gemstones that are sewn into the robes to protect the Jawas' eyes from the bright sunlight (no mention about WHY they would evolve such delicate eyes in such a hostile environment).
Though the Mandalorians were usually distinctly human, one did not need to be human to become one. Instead, what one needed to do was follow the Mandalorian Creed. Thus, some non-human individuals could be adopted into the Mandalorian creed.
