The reason for the different actors is because it is a different universe. The two movie series are based on two separate Spiderman story lines. In which the characters are very different including the different love interest, Mary Jane for Spiderman's original universe and Gwen Stacy in the Amazing Spiderman.
Marvel did not remake (or more accurately, reboot) the Spider-Man movies. It was Sony Pictures, the studio that owns the Spider-Man film rights, who made that decision. Twice, when box office revenues started to decline, Sony decided to make a new series of Spider-Man films with a new director and a new cast.
They keep making (and remaking) Spider-Man so the rights don't revert back to Marvel Studios. They keep rebooting Spider-Man because they have little patience for correcting past mistakes so its just easier to hit the reset button (or time constraints in the case of Raimi and the cancelled Spider-Man 4).

Spider-Man: Far From Home continues Sony's impressive work with 3D effects, providing some primo visuals and a clear understanding of the medium. But there are points to be docked for leaving some pieces of the film virtually untouched, and the brightness issue should be crucial to your decision to see this film in 3D.

Best: A very funny film
The overuse of "Peter Tingle" aside, Far From Home is as genuinely funny as you would hope. At this point, a sense of humor is as much a trademark of the MCU as high-flying superhero action and a lack of secret identities (think about it), and Far From Home doesn't disappoint on either score.In America, Spider-Man Far From Home has a PG-13 rating, meaning parents are strongly cautioned that some material may be inappropriate for children under 13.
The PG-13 rating on each of the Spider-Man movies is an important footnote -- there is violence, explosions, loud noises, and likely some cruder situations that the kids will find themselves in. They're teenagers, after all, and teens have a tendency to get themselves into a fair bit of trouble.
