The Physics Behind the Baked AlaskaThe ice cream is surrounded by meringue and sponge cake, which conduct heat very poorly. This keeps the intense heat in the oven from reaching the ice cream.
A Baked Alaska comprises of ice cream covered by cake and meringue. When it bakes in the oven, the meringue acts like an insulator around the ice cream, so it won't melt, providing it sets for long enough in the freezer beforehand.
Early versions of Baked Alaska appeared as early as 1802. According to historians, Thomas Jefferson was one of the first presidents to serve ice cream at a state banquet in the White House. As the story goes, Jefferson requested the ice cream to be served encased in a hot pastry.
Alaska: Baked AlaskaWhile Alaska doesn't have a named state dessert, baked Alaska was inspired by the state's history. In 1867, Alaska became the 49th state when America bought land from Russia in the land deal, around the time this impressive but difficult dessert was created.
This version of Baked Alaska at Delmonico's restaurant in New York City stays true to the original: a walnut sponge cake layered with apricot compote and banana gelato, covered with torched meringue.
Historians estimate that this recipe evolved into ice cream sometime in the 16th century. England seems to have discovered ice cream at the same time, or perhaps even earlier than the Italians. "Cream Ice," as it was called, appeared regularly at the table of Charles I during the 17th century.

A true Baked Alaska is comprised of a layer of sponge cake, topped with a layer of ice cream, and then covered in meringue. The toasted meringue insulates the ice cream layer so that it remains frozen. When served, Baked Alaska is a dichotomy of textures with soft cake, frozen ice cream, and warm meringue.
It is a good thermal insulator, and as such it does not easily let heat flow through it. In this way it protects the cold ice cream underneath—at least for some time. If you left the cake in the hot oven for too long, however, the ice cream center would eventually warm up and melt.

The name comes from Sam German — who was either an American or an Englishman, depending on what you read. In 1852, he invented a style of sweet baking chocolate for the Baker's chocolate company. The company named it after him, but "German's Chocolate" didn't become well-known until 1957.
1866 – The French food writer, Baron Leon Brise, wrote a column in the French Journal, Liberte, on June 6, 1866 which suggests the creation of the dessert, Baked Alaska, was introduced into France by French Chef Balzac.
A parfait is a sweet dessert made of layered ingredients in a tall glass. If you order a parfait at your favorite ice cream shop, it may have layers of ice cream, fruit sauce, and whipped cream.
Using a Broiler to Toast the Meringue:Place your meringue topped pie or tart on a broiler safe pan or tray. When the broiler is hot, transfer the pan to the oven. Broil 3-5 minutes or until meringue is browned to your liking.
