What you have to do is go in mouse mode - open your menu, hold L1 and press the right stick. Then you can click on the time and change it between local time, server time and Eorzea time.

1 Answer. There is no option to wait until specific time of day. You can camp/use hotel anytime, to wait until next day morning (6:00 AM). Also, when you take hunting job, where monsters appear only at night, game will suggest you to skip time until night starts (8:00 PM).
How to catch the Vesper Gar - Fishing Side Quest, Start sidequest chain near Alstor Slough. Preparation: The Vesper Gar has a strong attack and moves left to right quickly. Update your gear at the fishing store near the Fishing Spot (Vesperpool East Bank) just north of the camp. Make sure to use a Dragon Beard line.
