It's important to think about how hard an AP exam might be for you before signing up for the class. The average passing rate is around 60-70%, so your odds of passing an AP exam are generally good.
AP tests are scored on a scale of 0-5, with 5 being the highest score you could get. Most schools will give credit for scores of 4 or 5, and some even accept the occasional 3. Obviously if you don't indicate a school, scores won't be sent anywhere other than your house and to your high school.

In AP classes you're taking the class to pass a test so the whole structure of the class is much more rigid and uniform. That's not to say, however, that college classes are any easier than AP classes.
AP Lang is a difficult course, regardless of how good you are at English. Lots of writing (not too bad; you shouldn't be in an AP humanity sort of class if you're afraid of writing). I find that it just is a complex subject, personally. Bottom line, it's the study of rhetoric.

Second, balance your course load. Unless you're applying to the most selective universities, 4 to 5 AP courses over your high school years is more than enough. For students applying to the most selective colleges, you might need 7–12. But even so, taking 4 AP courses in a year can be extremely challenging.
Generally, a 5 on the AP exam scale means you've passed the exam and depending on the college/university of your choice means you don't need to take the gen ed credit for that course. Also, a 5 means you understand the material enough that you would test out of the gen ed course it fulfills.
Euro is definitely harder than APUSH in my experience, since generally you have years of background info with APUSH that you don't have with Euro. I wouldn't say it's the hardest AP, though, as that "honor" likely goes to one of the sciences.

Personally, my teacher was pretty great, so I would reccomend the class if your AP Bio teacher is good. Curriculum wise, this course requires a pretty good amount of memorization, but if you have taken PreAP biology previously it's easier.Freshman year you might take one or two AP classes if they're available. Sophomore year you can ramp it up to two or three. Junior year, if you're hoping to attend an Ivy League school, you should consider taking three to five AP classes in core subject areas.
It's a very memory intensive course, and usually lacks a lot heavy concepts. The people I know who loved anatomy were great at rote memorization. People like me, who learn conceptually, had a harder time. In a human biology class you'll do some basic anatomy.

The idea is that you could take the exam in different years or on different forms and still get the same score, regardless of the difficulty of the test.
