First, check the website of your mail provider to see if your messages are showing in the Sent folder there. If your messages are being stored on the mail server, then check where your iPhone is storing them: Open Settings > Accounts & Passwords. Tap on the account that you're having the issue with.
You might not be able to view your sent email messages if Outlook isn't setup to keep a copy of sent items. Scroll down to Save messages and make sure the check box for Save copies of messages in Sent Items folder is checked.

GMail does not delete your sent mail. This would be because you have set your preferences not to save sent mail. To change this we would have to know how you access G-Mail as the default from G-mail if you access via the WebMail interface (at Mail.google.com) is to save all sent mail with the “Sent” label.
If your recipient did receive your email message and actually read it or opened it, there are ways to know. Sent is probably the folder used by the server (if you use web access) or is used by a smartphone and sent items is used by outlook. You should be able to set the device to use the sent items folder.
To assign a folder as the Sent Items folder in Outlook 2010;
File-> Account Settings-> Account Settings… -> double click on the IMAP account. Select the Sent Items tab. Enable the option “Save sent items in the following folder on the server”.The reason there are duplicates in the Sent Items folder for some email providers is that the server automatically creates an item in the Sent Items and Outlook uploads the same item again. For Read/Unread status of an email Outlook relies on the server. If the status from server is unread Outlook sets it accordingly.
To create a rule from a message:
- Click on a message from your inbox or sent items.
- Select the Home tab from the navigation ribbon.
- Select Rules from the "Move" group.
- Choose Create Rule from the dropdown list.
- Click on presented check boxes under the section When I get e-mail with all of the selected conditions.
Please do as follows:
- Open the Sent Items folder, and double click to open the specified sent email you will edit.
- Now the sent email is opening in the Message window.
- In the popping Recall This Message dialog box, please check the Delete unread copies and replace with a new message option, and click the OK button.
