The best way to get close to retaining a medium rare finish is to earmark the thickest part of the roast for reheating.
- Place the leftover roast in a pan and cover with foil.
- Place in a preheated 300-degree oven for approximately 20 to 30 minutes, depending on the size of the piece.
The Best Way to Reheat a Roast
- Place roast, uncovered, on wire rack set in rimmed baking sheet. Place sheet on middle rack in 250-degree oven.
- Roast until meat registers 120 degrees (1 to 1 1/2 hours depending on the roast). Pat surface dry with paper towels.
- Sear roast on all sides in oiled, hot skillet, 1 to 1½ minutes per side.
Roasted potatoes: These also take a little time to reheat properly, but it's worth it if you don't want soggy, cold-in-the-middle potatoes. Microwaves are really only good for reheating food and making frozen food, so an oven is always going to be preferable.
Here are a few foods you should never reheat for safety reasons.

- Reheating mushrooms can give you an upset stomach.
- You probably shouldn't reheat your chicken.
- Eggs can quickly become unsafe to reheat.

The average time to preheat an oven to 350° is about 15 minutes, but the time varies depending on the stove. Older stoves may take longer to preheat; some newer stove models have a fast preheat feature. If you're preheating to 450°, add another five minutes to the time.

When it comes to reheating, do not reheat food in the slow cooker. Again, it can take too long for the food to come up to a safe temperature. After that you can place the food in a slow cooker to keep it warm for up to two hours.
Slice meat, cover with gravy, loosely cover whatever it's in and microwave until piping hot (maybe three minutes for enough for two people?). Give it a stir or a shake halfway through, too. I normally put in the oven gas 4. Make sure meat in covered with the gravy and then cover dish with either lid or foil.
Keep your meat in the fridge for no longer than two days. Minced beef and offal should be consumed within 24 hours. Never prepare raw and cooked meat with the same knife or on the same chopping board to avoid bacterial contamination. Beef can be frozen and used within six months.
Place wrapped roast beef into either heavy-duty freezer bags or airtight containers. If you wrap and store properly, it is recommended that you can store your roast beef in the freezer for up to 6 months. It is possible it could be safe beyond that date but this is the recommended time frame.
The more undercooked it is, and the sooner you want to eat it, the thinner you'll want to slice it. Place the meat in an oiled roasting pan or Dutch oven; drizzle it with some stock, sauce, or water; cover it with aluminum foil; and bake the whole thing in a 400° F oven until cooked.
